People ask me if I am into Raw Food, Vegetarian, Vegan, Paleo...I say that I am a bit of all.
I worked in the City, having long commuting...and I am quite lazy; so I kind of understand what we really can/want to do when it comes to food.
But we are entering a new era: The food revolution.
We best to pay attention to it to have a bright and healthy future.

Raw food is about 50% of my diet, and recently reintroduced a bit of organic and local free range meat.

Realising that finally we are meant to function better with some well chosen and tastily prepared animal proteins, I made a special effort to make meat very palatable, the use of the Vitaliseur makes meat specially exquisite, tender and detox it.

What I don't encourage is to replace meat by cereals, we will exhaust the pancreas for instance, and we shouldn't encourage the forced agriculture/monocultures which is devastating the planet.

We eat what the animals eat.
If animals (from intensive farming) eat GMO/Trans soy and cereals, which are not from their natural food chain, we are going to eat ill animals: with a tired pancreas, fatty liver, poor immune compensated by antibiotics....
We should eat grass-fed animals and eggs, no compromises.

I discovered that raw food is fully covered by a whole universe of talented chefs and cooks; and I had the chance to go to great workshop to find out that it wasn't only about salads, far from that!

You will learn how to repair your digestive system and you will forget about IBS, constipation, food intolerance, weight problems, poor immune...while you are discovering that food can be so tasty that it will stimulate some happy feel in the mind and body.

Time consuming? Not at all, it is an art, an alchemy, your first medication, a life and mind enhancer. A bit of organisation, just at the start, and you are part of the 'new fun', and it works for busy life and mums.

OMG, you must try these!:

Making your own raw Sauerkraut: one of the greatest foods for the health of the digestive system.
I am a big fan of white and red cabbage, but you can use different veg.
Grates the cabbages roughly in a food processor or with a mandolin.
In a large bowl: massage the cabbage with 1 tbsp. of organic sea salt, for 5 mins ish.
It will release some juice,
The salt kills toxins and will help with the fermentation.
Pack into a wide mouth jar, and gradually press down to avoid air pockets (I use the bottom of a rolling pin).
Cover the top of the cabbage with leaf of cabbage and put the lid on, but leave it a bit loose.
Store the jar(s) in a dark place, at room temperature. I personally place it under the kitchen sink, on a tray as some liquid will run out of the jar during fermentation.
It's good to eat after 10 days but you can leave it longer.
The fermentation will stop when you store in the fridge.
I add it to a meal as a side vegetable, with some salad and then you can use it as a dressing too (sometimes I add extra virgin olive oil or another cold pressed oil rich in omega 3).
I recommend to start with a little quantity and to increase gradually as you may experience a detox effect (I did!).

Antioxidant smoothie bomb of the week: Beetroot - blueberry - kumquat or tangerine - carrot - pineapple - lemon and ginger
1 small to medium raw beetroot, peeled and cubed
1 handful of organic or well washed* blueberries
4 kumquat or a tangerine
1 medium organic carrot
1/4 ripe medium pineapple flesh
juice of one lemon
Cube 2 cm2 of peeled ginger
All the ingredient in your blender or Nutribullet, blend and add water if you want more liquid. Enjoy!
*Wash in water with a tsp of white vinegar, and rinse in a sieve or colander.

Green cleanser smoothie Bomb: Kale - rocket (or romaine if you want a smoother smoothie!) - white cabbage - parsley - lime - pear
A handful of organic Kale* stalk removed
A handful of rocket or Romaine green leafs*
1/4 of organic white cabbage*
Few parsley stalks
Juice of 1 lime
1 organic pear
All in the juicer or blender if you want to make a smoothie version. You can add some water if needed.
*If not organic, wash in water with a tsp of white vinegar, and rinse in a sieve or colander.



People ask me if raw food involve lots of soaking; yes it does!
Just in the evening for the next day, and so what!
We need to soak seeds anyway to digest them; or they won't be that beneficial for us, and for some people they can be irritating/bloating.
Lets start with this easy recipe, in no time you will make a five star starter or small lunch but packed with nutriments.

Carrot with sunflower seeds salad
A raw food recipe so full of flavour and goodness

For two people:
• 4 carrots
• Sunflower seeds
• Fresh parsley
• Lettuce leafs – organic and washed

Chop roughly*, in the processor, the carrots and the sunflowers soaked in water for 12 hours (and drained), and lots of fresh parsley.
*The salad need to be crunchy.

Dispose, in two plates, on the top of the lettuce leafs.

Prepare the dressing with:
• 1/2 Tbsp. of tahini
• Juice of 1/2 lemon
• 3/4 Tbsp. tamari
• 3 Tbsp. extra virgin olive oil or cold pressed rapeseed oil.
Stir well in a little bowl and pour on the salad.
Bon appetit!
